INCA’S GOLD Grape and Carrot Quinoa Salad

Ingredients

1 cup of Quinoa seeds
2 cups of water
1 cup of seedless grapes (cut in halves, optional)
2 medium carrots, grated
¼ cup of sunflower seeds
½ cup of fresh parsley, chopped
¼ cup of yogurt
2 to 3 tablespoons of olive oil
Salt, pepper, honey (optional)

Add the Quinoa seeds to the water in a saucepan, bring to a boil, reduce heat and simmer covered for 15 minutes or until the water is absorbed. Fluff with a fork and let stand in a bowl to cool for 5 minutes. Add the grapes, carrots, sunflower seeds, parsley. In a cup mix the oil, yogurt, salt, pepper, honey (optional). Pour over the salad and mix well. Enjoy your super healthy and tasty salad.
